Bacon Cornmeal Muffins

Ingredients
- 1 (12-oz.) pkg. Farmland® Hickory Smoked Bacon
- 1 1/4 cups flour
- 3/4 cup yellow cornmeal
- 1 tablespoon baking powder
- 2 teaspoons chili powder
- 4 green onion(s) finely sliced, with tops
- 1/2 cup green bell pepper(s), chopped
- 1 egg
- 1 cup lowfat milk
- 1/4 cup margarine, melted
Preparation
- Heat oven to 375°F. Cook bacon until crisp. Drain, crumble and set aside. Combine flour, cornmeal, baking powder and chili powder in mixing bowl. Add bacon, green onions and green pepper; mix well.
- Beat egg lightly in small bowl. Blend milk and margarine with egg. Add egg mixture to flour mixture; stir just until moistened.
- Spoon into muffin cups coated with vegetable cooking spray. Bake at 375°F. for 15 to 20 minutes or until firm on top and lightly browned.
