Bacon Cornmeal Muffins

Ingredients

  • 1 (12-oz.) pkg. Farmland® Hickory Smoked Bacon
  • 1 1/4 cups flour
  • 3/4 cup yellow cornmeal
  • 1 tablespoon baking powder
  • 2 teaspoons chili powder
  • 4 green onion(s), finely sliced, with tops
  • 1/2 cup green bell pepper, chopped
  • 1 egg(s)
  • 1 cup lowfat milk
  • 1/4 cup margarine, melted

Preparation

  1. Heat oven to 375°F. Cook bacon until crisp. Drain, crumble and set aside. Combine flour, cornmeal, baking powder and chili powder in mixing bowl. Add bacon, green onions and green pepper; mix well.
  2. Beat egg lightly in small bowl. Blend milk and margarine with egg. Add egg mixture to flour mixture; stir just until moistened.
  3. Spoon into muffin cups coated with vegetable cooking spray. Bake at 375°F. for 15 to 20 minutes or until firm on top and lightly browned.
