Mexican bolillo rolls are filled with a zesty black bean spread, fried eggs and bacon, salsa fresca and crumbled cheese for a hearty lunch or dinner.

Ingredients
2 Bolillos (Mexican-style bread rolls) or baguettes, sliced in half horizontally
1 Cup of Black Beans Spread (recipe to follow)
4 Slices of Farmland Bacon, cooked
4 Eggs, fried
1 Cup of Salsa Fresca (recipe to follow) or 1 cup store bought salsa
1/2 Cup of Cotija Cheese, crumbled
Cilantro, for garnish
Black Bean Spread:
2 Tablespoons of Vegetable Oil
1/2 Cup of Diced Yellow Onion
1 Jalapeño, seeds removed, diced
2 Cloves of Garlic, sliced
1 15 oz. can of Black Beans, rinsed and drained
1/2 Teaspoon of Ground Cumin
1 Lime, juiced
1 Cup of Chicken Stock
Salsa Fresca:
2 Ripe Tomatoes, seeds removed, diced
1/4 Cup of Diced Red Onion
1/2 Jalapeño, seeds removed, diced
1/4 Cup of Fresh Cilantro, minced
1 Lime, juiced
Salt and Pepper, to taste
Directions

Black Bean Spread:
1. Heat vegetable oil in medium sauté pan over medium heat. Add onions and jalapeños. Sauté until softened, and then add garlic. Cook for additional 2 minutes.
2. Add black beans, cumin and lime juice, and stir to combine. Cook until beans are warmed through.
3. Transfer to blender and blend until smooth, adding chicken stock to achieve spreadable consistency.

Salsa Fresca:

1. In mixing bowl, combine all ingredients but seasonings, and then season with salt and pepper.

To Serve:
1. Toast bread lightly in oven or toaster.
2. Top bottom half with Black Bean Spread followed by bacon. Top with fried eggs. Garnish with Salsa Fresca, cheese and more cilantro. Place other half of bread on top.
