Breakfast Bacon Corn Muffins

- Serves: 6 muffins
Ingredients
- 1 (6 1/2- to 8 1/2-oz.) pkg. corn muffin mix
- 1 cup (4 ounces) shredded Cheddar cheese
- 1 egg(s)
- 1/2 cup milk
- 6 slices Farmland® Premium Fully-Cooked Bacon - Hickory Smoked cut in half
Preparation
- Heat oven to 400°F. Lightly grease muffin pan.
- Combine muffin mix, cheese, egg and milk; mix with fork until just combined.
- Spoon muffin mix into 6 greased muffin cups. Form an "X" over the top of each muffin with 2 halves of bacon strip, tucking ends into batter.
- Bake at 400°F. for 15 to 20 minutes until golden brown.
