Breakfast Cake

Ingredients

  • 1 (16-oz.) pkg. Farmland® Hickory Smoked Bacon
  • 2 cups buttermilk baking mix
  • 1 cup (4 oz.) shredded cheese
  • 2 tablespoons sugar
  • 2/3 cup milk
  • 1 egg(s), lightly beaten
  • 1/4 cup mild picante sauce

Preparation

  1. Heat oven to 350°F. Cook bacon until crisp. Drain, crumble and set aside.
  2. Combine baking mix, 1/2 cup cheese and sugar in mixing bowl. Stir in milk, egg and picante sauce. Blend mixture just until moistened.
  3. Sprinkle bacon in bottom of 12x8x2-inch baking dish coated with vegetable cooking spray. Pour batter over bacon. Bake at 350°F. for 20 to 25 minutes or until pick inserted in center comes out clean.
  4. Sprinkle with remaining 1/2 cup cheese. Bake for 3 to 5 minutes or just until cheese is melted.
