Chipotle-Chorizo Stuffed Jalapenos
This south-of-the border snack definitely brings the heat.
1 12 oz. package. of Farmland® Original Pork Sausage Roll
1 tablespoon of Chipotle Chile Powder
1 tablespoon of Vinegar
1 teaspoon of minced Garlic
1/2 teaspoon of Dried Oregano
1 3 oz. package of Light Cream Cheese
1/2 cup of Crumbled Cotija Cheese
1/2 cup of Crumbled Quesadilla Cheese
8 Large Jalapeño Chiles, sliced lengthwise and remove seeds
1. Heat oven to 400°F. Cook sausage in medium skillet over medium-high heat until well browned; drain. Return sausage to skillet.
2. Stir chile powder, vinegar, garlic and oregano into sausage; mix well. Add cream cheese; mix until well combined, turning heat onto low if needed. Stir in remaining cheese.
3. Press large spoonful of sausage mixture onto each jalapeño half; place on baking sheet. Bake at 400°F for 12 to 17 minutes until filling is hot and jalapeño edges begin to wilt and brown.
