Coleslaw with Bacon, Apples & Cheddar

Ingredients

  • 1 (16-oz.) pkg. Farmland® Hickory Smoked Bacon
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon hot pepper sauce
  • 4 cups shredded cole slaw mix
  • 1 large red apple(s), unpeeled, cored and finely diced
  • 1 cup (4 oz.) shredded sharp Cheddar cheese

Preparation

  1. Cook bacon according to package directions until crisp; drain and crumble.
  2. Whisk together oil, mayonnaise, mustard and hot sauce in small bowl.
  3. Combine cabbage, apple, cheese and crumbled bacon in serving bowl. Add dressing and toss to coat. Refrigerate at least 30 minutes before serving.

Serves 4
