Coleslaw with Bacon, Apples & Cheddar

Ingredients
- 1 (16-oz.) pkg. Farmland® Hickory Smoked Bacon
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon hot pepper sauce
- 1/4 cup extra virgin olive oil
- 4 cups shredded cole slaw mix
- 1 large red apple(s) unpeeled, cored and finely diced
- 1 cup (4 oz.) shredded sharp Cheddar cheese
Preparation
- Cook bacon according to package directions until crisp; drain and crumble.
- Whisk together oil, mayonnaise, mustard and hot sauce in small bowl.
- Combine cabbage, apple, cheese and crumbled bacon in serving bowl. Add dressing and toss to coat. Refrigerate at least 30 minutes before serving.
