Extra Lean Pork Oriental Salad

Ingredients

  • 1 1/2 teaspoons grated fresh ginger
  • 3 green onion(s) chopped
  • 1 pkg. Farmland® Deep Basted™ EXTRA TENDER™ Pork Blade Steak (approx. 1 pound)
  • 1 1/2 cups bean sprouts
  • 1 1/2 cups pea pods cut in bite-size pieces
  • 1 cup coarsely chopped red cabbage
  • 1 (3-oz.) pkg. ramen noodles
  • 1/4 cup sliced almonds
  • 2/3 cup unsweetened pineapple juice
  • 2 cups fresh leaf spinach coarsely chopped

Preparation

  1. Cut pork steak into strips. Spray large non-stick skillet with vegetable cooking spray. Stir-fry pork strips in hot skillet until thoroughly cooked and no pink remains.
  2. Toss spinach, bean sprouts, pea pods, red cabbage, green onion and almonds in large bowl. Break noodles into small pieces and add to vegetables; tossing to blend. Mix seasoning packet from noodles with pineapple juice and ginger for dressing.
  3. Arrange pork strips in circular pattern on vegetable mixture. Serve with dressing as desired.
