Grilled Pesto Potato Packets

• Serves: 1

Ingredients

• 1 large potato peeled and thinly sliced
• 1/4 cup chopped onion
• 1/4 cup chopped bell pepper(s)
• 1 tablespoon prepared pesto
• 2 slices Farmland® Hickory Smoked Bacon - Thick Sliced Peppered cut in half

Preparation

1. Spray 18 x 12-inch piece of heavy-duty foil with nonstick cooking spray. Layer all ingredients, in order listed, in center of foil.
2. Heat charcoal or gas grill to medium. Wrap packet securely using double-fold seals, allowing room for heat expansion. Grill 25 to 30 minutes, turning once, or until potatoes are tender.
