Grilled Pork Filets with Mango Tequila Sauce

Ingredients
- 1/4 cup chopped sweet yellow onions
- 1/2 tablespoon olive oil
- 1/3 cup chopped yellow bell pepper
- 1 tablespoon sugar
- 1/2 (1 lb. 8-oz.) jar mango packed in extra light syrup, drained
- 1 tablespoon tequila
- 1 tablespoon key lime juice, divided
- 1 large jalapeno, seeded and finely minced
- 1 tablespoon fresh cilantro, minced
- salt to taste
- 4 Farmland® Bacon-Wrapped Pork Filet , thawed
Preparation
- To make Mango Tequila Sauce, sauté onions in hot olive oil over medium heat until tender and slightly browned on the edges. Add bell pepper and sauté until heated through. Stir in sugar until dissolved; remove from heat. Combine mangoes, tequila, 1/2 tablespoon lime juice, and onion mixture in blender. Purée in blender until smooth.
- Combine minced jalapeno, cilantro and remaining 1/2 tablespoon key lime juice in small bowl; salt to taste. Let stand until ready to serve.
- Heat charcoal or gas grill to medium-high. Grill thawed pork filets 13 to 18 minutes, turning every 5 minutes, until internal temperature reaches 155oF.
- To serve, spoon Mango Tequila Sauce onto plate; top with Bacon-Wrapped Pork Filet. Garnish with minced jalapeno mixture.
