Key Lime Kabobs

Ingredients

  • 3 pounds Farmland® EXTRA-TENDER® Boneless Pork Loin - Center Cut, cubed
  • 1 (12-oz.) can frozen limeade concentrate, thawed
  • 1/2 cup rum
  • 1 medium red onion, chopped
  • 1 tablespoon chopped fresh  parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 6 key lime, cut into 1/4-inch thick slices
  • 1/2 cup sugar
  • 1 large red onion, cut into wedges

Preparation

  1. Place pork cubes in resealable plastic food bag. Add limeade, rum, chopped onion, parsley, salt and pepper; mix well. Marinate in refrigerator for 3 to 4 hours.
  2. Heat charcoal or gas grill to medium. Coat both sides of lime slices in sugar; set aside.
  3. Arrange pork cubes, onion wedges and lime slices on 6 skewers. Cook kabobs on grill, turning occasionally, until pork is done.

Serves 6
