Key Lime Kabobs

Ingredients
- 3 pounds Farmland® Deep Basted™ EXTRA TENDER™ Boneless Pork Loin - Center Cut cubed
- 1 (12-oz.) can frozen limeade concentrate thawed
- 1/2 cup rum
- 1 medium red onion chopped
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 6 key lime cut into 1/4-inch thick slices
- 1/2 cup sugar
- 1 large red onion cut into wedges
Preparation
- Place pork cubes in resealable plastic food bag. Add limeade, rum, chopped onion, parsley, salt and pepper; mix well. Marinate in refrigerator for 3 to 4 hours.
- Heat charcoal or gas grill to medium. Coat both sides of lime slices in sugar; set aside.
- Arrange pork cubes, onion wedges and lime slices on 6 skewers. Cook kabobs on grill, turning occasionally, until pork is done.
