Marinated Pineapple Pork Loin Roast

Ingredients
- 1 pkg. Farmland® Deep Basted™ EXTRA TENDER™ Boneless Pork Loin Filet (about 2 lbs.)
- 1 cup finely chopped fresh pineapple
- 1/2 cup honey
- 1/2 cup light soy sauce
- 1/4 cup white wine vinegar
- 2 tablespoons grated fresh ginger
- 2 cloves garlic minced
- 1 teaspoon coarsely ground black pepper
Preparation
- Score loin in 1-inch diamonds with a sharp knife (1/4-inch deep); place in resealable plastic bag. Combine all remaining ingredients in small bowl; pour over pork loin. Marinate 2 hours to overnight in refrigerator.
- Heat oven to 350°F. Remove loin from marinade and place in foil-lined baking pan. Roast for 1 to 1 1/2 hours until internal temperature reaches 150°F to 155°F. Let stand 10 minutes before serving.
- Place remaining marinade in small saucepan; bring to a boil. Baste meat with marinade during last 30 minutes of roasting.
