Pork Chops with Peach Jalapeno Salsa

Ingredients
- 1 medium red onion finely chopped
- 2 large peaches peeled, pitted and coarsely chopped
- 1-2 tablespoons seeded, finely chopped jalapeno chiles
- 1 tablespoon lime juice
- 3 tablespoons cornmeal
- 1/4 teaspoon cayenne pepper
- 4 Farmland® Deep Basted™ EXTRA TENDER™ Boneless Pork Loin - Center Cut for Chops about 1 1/4 inches thick
- 1/3 cup flour
- 1 teaspoon vegetable oil
- 1 teaspoon dried thyme
- 2 teaspoons sugar
- 1/3 cup dry bread crumbs
Preparation
- To make salsa, combine peaches, onion, jalapeno chiles, lime juice and sugar; set aside.
- Mix together flour, breadcrumbs, cornmeal, thyme and cayenne. Coat the chops with seasoned flour mixture.
- Heat oil in skillet, cook chops until golden brown 12 to 15 minutes per side or until internal temperature reaches 160°F. Top each serving with salsa.
