Pork Chops with Peach Jalapeno Salsa

Ingredients

  • 1 medium red onion finely chopped
  • 2 large peaches peeled, pitted and coarsely chopped
  • 1-2 tablespoons seeded, finely chopped jalapeno chiles
  • 1 tablespoon lime juice
  • 3 tablespoons cornmeal
  • 1/4 teaspoon cayenne pepper
  • 4 Farmland® Deep Basted™ EXTRA TENDER™ Boneless Pork Loin - Center Cut for Chops about 1 1/4 inches thick
  • 1/3 cup flour
  • 1 teaspoon vegetable oil
  • 1 teaspoon dried thyme
  • 2 teaspoons sugar
  • 1/3 cup dry bread crumbs

Preparation

  1. To make salsa, combine peaches, onion, jalapeno chiles, lime juice and sugar; set aside.
  2. Mix together flour, breadcrumbs, cornmeal, thyme and cayenne. Coat the chops with seasoned flour mixture.
  3. Heat oil in skillet, cook chops until golden brown 12 to 15 minutes per side or until internal temperature reaches 160°F. Top each serving with salsa.
