Pork Chops with Peach Jalapeno Salsa

Ingredients

  • 2 large peaches, peeled, pitted and coarsely chopped
  • 1 medium red onion, finely chopped
  • 1-2 tablespoons seeded, finely chopped jalapeno chiles
  • 1 tablespoon lime juice
  • 2 teaspoons sugar
  • 1/3 cup flour
  • 1/3 cup dry bread crumbs
  • 3 tablespoons cornmeal
  • 1 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper

  • 1 teaspoon vegetable oil

Preparation

  1. To make salsa, combine peaches, onion, jalapeno chiles, lime juice and sugar; set aside.
  2. Mix together flour, breadcrumbs, cornmeal, thyme and cayenne. Coat the chops with seasoned flour mixture.
  3. Heat oil in skillet, cook chops until golden brown 12 to 15 minutes per side or until internal temperature reaches 160°F. Top each serving with salsa.
