Pork Cordon Bleu

Ingredients

  • Farmland® Nutrition WiseŽ Boneless Pork Loin - Center Cut for Chops, (about 1 1/2-inches thick)
  • 2 ounces Carando® proscuitto
  • 2 oz. Swiss cheese, cut into four 2 x 1/4-inch rectangles
  • 1 teaspoon dried thyme
  • 1/2 cup flour
  • 1 egg(s), beaten
  • 1 teaspoon water
  • 1/2 cup dry bread crumbs
  • 2 teaspoons margarine

Preparation

  1. Slice each chop lengthwise almost in half to butterfly. Between two pieces of plastic wrap, pound each chop to approximately 1/3-inch thickness.
  2. On half of each chop, place prosciutto and 1 piece of cheese; sprinkle with thyme. Roll chops to enclose filling. Coat with flour. Combine egg and water, dip pork in egg mixture and roll in breadcrumbs.
  3. Melt margarine in large skillet. Add pork and cook 10-12 minutes, turning frequently to brown all sides.
