Puffy Ham and Egg Casserole

Ingredients

  • 12 egg(s), beaten
  • 1/2 cup flour
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups Farmland® Simply Natural* Boneless Smoked Ham - Classic Cure, chopped
  • 2 cups (8 oz.) shredded Monterey Jack cheese
  • 2 cups (8 oz.) shredded Cheddar cheese
  • 1 cup small curd, lowfat cottage cheese
  • 2 (4-oz.) cans chopped green chiles
  • 1/3 cup chopped red bell pepper

Preparation

  1. Heat oven to 350°F. Combine eggs, flour, milk, baking powder and salt in large bowl. Add ham, Monterey Jack and Cheddar cheeses. Stir in cottage cheese, green chiles and sweet red pepper.
  2. Pour egg mixture into 13 x 9 x 2-inch baking dish coated with vegetable oil spray. Bake uncovered for 40 to 50 minutes until puffy in center and lightly browned, or until knife inserted near the center comes out clean. Let stand 5 minutes before serving.
