Puffy Sausage and Egg Casserole

Ingredients

  • 1 (1-lb.) pkg. Farmland® Original Pork Sausage Roll
  • 2 cups (8 oz.) shredded Monterey Jack cheese
  • 2 cups (8 oz.) shredded Cheddar cheese
  • 12 egg(s)
  • 1/2 cup flour
  • 1/4 cup lowfat milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup small curd cottage cheese
  • 2 (4-oz.) cans chopped green chiles

Preparation

  1. Heat oven to 350°F. Brown sausage, stirring to break apart; drain.
  2. Spread sausage in 13x9x2-inch baking pan coated with vegetable cooking spray. Top with Monterey Jack and Cheddar cheese.
  3. In large bowl, beat eggs. Stir in flour, milk, baking powder and salt. Stir in cottage cheese and green chiles. Pour egg mixture over sausage and cheese. Bake at 350°F. for 50 minutes or until puffy in center and lightly browned.
