Puffy Sausage and Egg Casserole

Ingredients
- 2 (4-oz.) cans chopped green chiles
- 1/2 teaspoon salt
- 1 (1-lb.) pkg. Farmland® Original Pork Sausage Roll
- 2 cups (8 oz.) shredded Cheddar cheese
- 1 teaspoon baking powder
- 1 cup small curd cottage cheese
- 2 cups (8 oz.) shredded Monterey Jack cheese
- 1/2 cup flour
- 1/4 cup lowfat milk
- 12 egg(s)
Preparation
- Heat oven to 350°F. Brown sausage, stirring to break apart; drain.
- Spread sausage in 13x9x2-inch baking pan coated with vegetable cooking spray. Top with Monterey Jack and Cheddar cheese.
- In large bowl, beat eggs. Stir in flour, milk, baking powder and salt. Stir in cottage cheese and green chiles. Pour egg mixture over sausage and cheese. Bake at 350°F. for 50 minutes or until puffy in center and lightly browned.
