Red Beans & Rice

Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper(s)
  • 1/2 cup chopped celery
  • 2 tablespoons butter
  • 1 cup Farmland® Cubed Ham
  • 2 (19-oz.) cans red beans drained and rinsed
  • 2 (14.5-oz.) cans stewed tomatoes
  • 2 teaspoons Creole seasoning
  • 2 cups cooked rice warm

Preparation

  1. Saute onion, bell pepper and celery in melted butter over medium-high heat in large skillet until tender-crisp.
  2. Stir in ham cubes; saute 3 minutes.
  3. Stir in beans, tomatoes and seasoning; bring to a boil. Reduce heat and simmer, uncovered, 20 minutes. Serve over rice.
