Red Beans & Rice

Ingredients
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper(s)
- 1/2 cup chopped celery
- 2 tablespoons butter
- 1 cup Farmland® Cubed Ham
- 2 (19-oz.) cans red beans drained and rinsed
- 2 (14.5-oz.) cans stewed tomatoes
- 2 teaspoons Creole seasoning
- 2 cups cooked rice warm
Preparation
- Saute onion, bell pepper and celery in melted butter over medium-high heat in large skillet until tender-crisp.
- Stir in ham cubes; saute 3 minutes.
- Stir in beans, tomatoes and seasoning; bring to a boil. Reduce heat and simmer, uncovered, 20 minutes. Serve over rice.
