Southwestern Ham Salad

Ingredients

  • 2 teaspoons chili powder
  • 1/2 cup diced red onion
  • 4 slices Farmland® Premium Boneless Classic Cure Half Ham , cut into strips
  • 1 teaspoon ground cumin
  • 1/4 cup dark red kidney beans
  • 1/2 ripe avocado, peeled and sliced into wedges
  • 2 teaspoons sugar
  • 1/2 cup lime juice
  • 1 (4-oz.) can chopped green chiles
  • 1 medium tomato, sliced into wedges
  • 6 cups torn lettuce

Preparation

  1. Cut ham slices into strips; set aside. Combine lime juice, sugar, chili powder and cumin in small bowl; mix well. Stir in chiles, beans and onion.
  2. Place 1 1/2 cups lettuce on each serving plate. Top with dressing mixture. Arrange tomato, avocado and ham on top of each salad. If desired, serve with salsa.
