Spanish Fiesta Pork Casserole

Ingredients

  • 1 (6.8-oz.) pkg. Spanish rice mix
  • 1 tablespoon olive oil
  • 1 (1-lb.) pkg. Farmland® EXTRA-TENDER® Boneless Fresh Pork Cubes
  • 1/2 cup sour cream
  • 2 (10-oz.) cans diced tomatoes with green chiles
  • 1 (15.5-oz.) can black beans, drained, rinsed
  • 1 cup frozen corn, thawed
  • 1 cup (4 oz.) shredded Cheddar cheese
  • 1 tablespoon chopped fresh cilantro

Preparation

  1. Heat oven to 375°F. Spray 12x8-inch (2 quart) baking dish with nonstick vegetable cooking spray. Prepare Spanish rice as directed on package.
  2. Heat oil in large nonstick skillet over medium-high heat until hot. Add pork; stir-fry 4 to 5 minutes or until lightly browned.
  3. In large bowl, combine cooked rice, pork, sour cream, one can tomatoes with green chiles, half the beans and half the corn; mix well. Spread mixture evenly in prepared dish. Top with remaining beans, corn, tomatoes with green chiles and cheese.
  4. Bake at 375°F. for 20 to 25 minutes or until thoroughly heated. Sprinkle with cilantro.
