Spanish Fiesta Pork Casserole

Ingredients
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 (6.8-oz.) pkg. Spanish rice mix
- 1 (1-lb.) pkg. Farmland® Deep Basted™ EXTRA TENDER™ Boneless Fresh Pork Cubes
- 2 (10-oz.) cans diced tomatoes with green chiles
- 1 (15.5-oz.) can black beans drained, rinsed
- 1 cup frozen corn thawed
- 1 cup (4 oz.) shredded Cheddar cheese
- 1 tablespoon chopped fresh cilantro
Preparation
- Heat oven to 375°F. Spray 12x8-inch (2 quart) baking dish with nonstick vegetable cooking spray. Prepare Spanish rice as directed on package.
- Heat oil in large nonstick skillet over medium-high heat until hot. Add pork; stir-fry 4 to 5 minutes or until lightly browned.
- In large bowl, combine cooked rice, pork, sour cream, one can tomatoes with green chiles, half the beans and half the corn; mix well. Spread mixture evenly in prepared dish. Top with remaining beans, corn, tomatoes with green chiles and cheese.
- Bake at 375°F. for 20 to 25 minutes or until thoroughly heated. Sprinkle with cilantro.
