Spicy Country Fries with Bacon

Ingredients

  • 2 teaspoons crushed red pepper
  • 1/2 teaspoon salt
  • 2 pounds (about 5) red potatoes cooked and cooled
  • 3/4 cup sliced green onion(s)
  • 1 (1-lb.) pkg. Farmland® Thick Sliced Bacon
  • 1/2 teaspoon coarsely ground black pepper

Preparation

  1. Cook bacon until crisp in large skillet. Drain; reserving 2 tablespoons bacon drippings. Crumble bacon and set aside.
  2. In same skillet, saute onions and red pepper flakes in reserved bacon drippings 1 minute.
  3. Cut potatoes in 1/2-inch cubes; add to skillet. Season with salt and pepper, as desired. Cook 15 minutes or until browned, turning frequently. Add bacon and blend with potatoes to heat.
