Spinach Salad with Bologna

Ingredients
- 1 (8-oz.) pkg. sliced fresh mushrooms
- 1 (12-oz.) pkg. Farmland® Sandwich Style - Bologna
- 12 oz. spinach torn into bite size pieces
- 2 teaspoons dill weed
- 1 tablespoon sugar
- 2 carrots shredded
- 1 cup plain, lowfat yogurt
- 1 cup (4 oz.) diced mozzarella cheese
Preparation
- To make dressing, combine yogurt, sugar and dill weed. Refrigerate 30 minutes to 1 hour before using to allow flavors to blend.
- Cut bologna into 1/4-inch squares. Lightly coat non-stick skillet with cooking spray; add bologna and saute until crisp around the edges.
- Place remaining ingredients on salad plates. Top with sauteed bologna. Drizzle dressing over salad.
