Spinach Salad with Bologna

Ingredients

  • 1 cup plain, lowfat yogurt
  • 1 tablespoon sugar
  • 2 teaspoons dill weed
  • 1 (12-oz.) pkg. Farmland® Sandwich Style - Bologna
  • 12 oz. spinach, torn into bite size pieces
  • 2 carrots, shredded
  • 1 (8-oz.) pkg. sliced fresh mushrooms
  • 1 cup (4 oz.) diced mozzarella cheese

Preparation

  1. To make dressing, combine yogurt, sugar and dill weed. Refrigerate 30 minutes to 1 hour before using to allow flavors to blend.
  2. Cut bologna into 1/4-inch squares. Lightly coat non-stick skillet with cooking spray; add bologna and saute until crisp around the edges.
  3. Place remaining ingredients on salad plates. Top with sauteed bologna. Drizzle dressing over salad.
