Strawberry Spinach Salad with Hot Bacon Dressing

Ingredients
- 6 slices Farmland® Hickory Smoked Bacon - Thick Sliced cut into 1/2-inch pieces
- 1 cup strawberry jam or preserves
- 1/2 cup cider vinegar
- 1 1/2 teaspoons Dijon mustard
- 8 to 10 ounces fresh spinach cleaned and trimmed
- 2 cups sliced fresh strawberries
- 1 cup pecans halves
- 1/2 cup shredded Swiss cheese
Preparation
- To make dressing, cook bacon in skillet over medium heat until crisp; do not drain. Stir in jam, vinegar and mustard. Heat over medium heat, stirring occasionally, until dressing begins to boil and ingredients are well blended.
- To make salad, combine all remaining ingredients in large bowl. Pour desired amount of warm dressing over salad and toss to coat. Serve immediately. Cover and refrigerate any leftover dressing.
