Vegetable and Ham Stir Fry

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon crushed red pepper
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1 large red bell pepper, cut into 3/4-inch pieces
  • 1 (1-lb.) pkg. Farmland® Julienne Ham Strips
  • 12 ears frozen or canned baby corn
  • 1 teaspoon no-salt-added instant chicken bouillon granules
  • 1 cup water
  • 1 cup orange juice
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice

Preparation

  1. Heat oil in large skillet or wok. Add garlic, ginger and crushed red pepper; stir-fry 1 to 2 minutes. Add green and red bell peppers; cook just until tender. Stir in ham and corn.
  2. Dissolve chicken bouillon in water; stir in orange juice, cornstarch and lemon juice. Add to vegetable mixture; heat until thickened and bubbly, stirring frequently. Serve over cooked rice if desired.
