Vegetable and Ham Stir Fry

Ingredients
- 3 tablespoons cornstarch
- 1/2 teaspoon crushed red pepper
- 1 large green bell pepper(s) cut into 1-inch pieces
- 1 (1-lb.) pkg. Farmland® Julienne Ham Strips
- 1 teaspoon grated fresh ginger
- 12 ears frozen or canned baby corn
- 1 teaspoon no-salt-added instant chicken bouillon granules
- 1 tablespoon lemon juice
- 1 cup water
- 1 cup orange juice
- 1 large red bell pepper(s) cut into 3/4-inch pieces
- 2 cloves garlic minced
- 2 tablespoons olive oil
Preparation
- Heat oil in large skillet or wok. Add garlic, ginger and crushed red pepper; stir-fry 1 to 2 minutes. Add green and red bell peppers; cook just until tender. Stir in ham and corn.
- Dissolve chicken bouillon in water; stir in orange juice, cornstarch and lemon juice. Add to vegetable mixture; heat until thickened and bubbly, stirring frequently. Serve over cooked rice if desired.
