Bacon-Cinnamon Roll Pancakes
Cream Cheese Frosting
4 tablespoons of unsalted butter, room temperature
2 oz. of cream cheese, room temperature
1 1/4 cups of powdered sugar
1 teaspoon of maple syrup
1/2 cup of melted butter
3/4 cup of dark brown sugar
1 tablespoon of cinnamon
6 slices of Farmland® Classic Cut Bacon
1 cup of all-purpose flour
2 tablespoons of sugar
1 1/2 teaspoons of baking powder
1/2 teaspoons of baking soda
1/2 teaspoons of coarse salt
1 1/4 cups of buttermilk
2 tablespoons of unsalted butter, melted
1 large egg
Cream Cheese Frosting:
1. In bowl of stand mixer, combine butter and cream cheese and beat until light and fluffy. Add in powdered sugar and maple syrup. Whisk until smooth and reserve.
1. Mix together all ingredients until smooth and transfer to piping bag or squeeze bottle. Reserve.
1. In large cast-iron pan or griddle, cook bacon over medium heat until crispy on both sides. Remove and drain on paper towel-lined plate. Reserve bacon fat, and once bacon has cooled, roughly chop it into large pieces.
2. In medium bowl, whisk together flour, sugar, baking powder, baking soda and salt. In separate bowl, whisk together buttermilk, butter and egg. Add flour mixture to liquid mixture and stir until just combined, with small lumps remaining.
