Grit Cakes with Ham, Gouda and Tomato Gravy

Ingredients
Grit Cakes: 
2 cups of milk
5 tablespoons of butter, divided
1 cup of coarse corn grits
8 oz. of Farmland┬« Diced Ham
1 cup of grated Gouda
Salt and pepper, to taste
1 cup of flour
Tomato Gravy: 
2 tablespoons of butter
1 small onion, diced
1 clove garlic, sliced
3 tablespoons of all-purpose flour
1 28 oz. can of peeled, chopped tomatoes, drained
2 tablespoons of milk
Salt and pepper, to taste
Directions
Grit Cakes:
1. In medium pot, over medium-high heat, combine milk and 3 tbsp. butter, and bring to slight simmer. Slowly whisk in grits and lower heat to medium-low. Cook, stirring occasionally, until softened. Stir in diced ham and Gouda cheese and season.
2. Spread grits into baking dish. Place layer of plastic wrap directly on grits and cool overnight in refrigerator. 
3. Cut into small cakes and coat lightly with flour.
4. Heat nonstick pan or cast-iron skillet over medium-high heat. Add 2 tbsp. butter and melt to coat bottom of pan. Add grit cakes and cook, flipping once, until browned and warmed through.
Tomato Gravy:
1. In medium sauce-pot, melt butter, add onions and cook until soft and translucent.
2. Add garlic and cook for additional 2 minutes.
3. Sprinkle flour into pot and mix to combine. Cook for 2 minutes, stirring often.
4. Gradually whisk in tomatoes and milk. 
5. Bring to slight simmer and season with salt and pepper.
