Turkey Bacon Zucchini Pasta
Prep Time15 mins.
4 slices of Pure Farmland® Uncured Turkey Bacon (diced)
1 zucchini, spiralized
1 teaspoon of Kosher salt
2 tablespoons of olive oil
1 cup of pea pesto
8 sun-dried tomatoes, sliced
Salt and pepper, to taste
1/2 cup of arugula leaves
2 oz of smoked mozzarella, torn into pieces
1 tablespoon of sunflower seeds, toasted
1 cup of fresh basil
1/2 cup of parsley
1 cup of green peas, cooked, cooled
1 clove garlic, chopped
1/4 cup of pine nuts
Juice and zest from 1 lemon
1/4 cup of olive oil
Salt and pepper, to taste
1. Cook turkey bacon on stovetop, then dice.
2. Heat oven to 325 degrees, place sunflower seeds on baking sheet, then toast for four-five minutes.
3. Prep all vegetables and mozzarella.

To Make Pea Pesto:
1. In food processor, add basil, parsley, peas, garlic, pine nuts, lemon juice and cheese.
2. Pulse to combine. With machine running, add in olive oil and mix to combine. Season with salt and pepper.
To Prepare Zucchini Pasta:
1. In colander, toss zucchini with kosher salt and allow to sit for 10 minutes.
2. Heat large sautĂ© pan over medium heat and add olive oil.
3. Add zucchini to pan and cook for 3 minutes, or until slightly softened.
4. Add in Pea Pesto and stir to combine. Add sun-dried tomatoes and cook for additional 2 minutes. Season with salt and pepper.
5. Remove to platter and top with arugula, smoked mozzarella, sunflower seeds and turkey bacon.
